Bread Baker and Bread Shaper
Firebrand Artisan Breads, Oakland's only wood-fired brick oven bakery, is seeking bread shapers and a morning baker. We craft naturally leavened bread, shape by hand, and keep a fast paced environment. We like to work hard and hustle.

Late Morning Shaper- Full time- competitive hourly wage
AM Shaper/Baker- Full time- competitive hourly wage
We are looking for someone who:
-Has previous experience in bread or specialty foods
-Is familiar with shaping baguettes, batards, boules, and rolls
-Is able to work 8
hours on their feet
-Understands importance of detail work and overall success of the business
-Is able to make quick and accurate decisions
-Understands the importance of tight schedules and deadlines
-Can work independently and as a member of a team
-Has excellent written and verbal communication skills
-Is able to lift and carry 50 pounds and move product up and down stairs
-Has a flexible schedule with weekends and holidays included
-Has a desire to constantly learn and be challenged
-Is self motivated and enthusiastic, especially under pressure
-Has demonstrated problem solving ability
-Has ability to speak English and Spanish (preferred but not required)
Job Performance Expectations
AM Shaper/Baker- 9:30pm-6am
-Shapes breads such as challah, ciabatta, pretzels, brioche, french, and many others
-Maintains a clean work environment
-Proofs breads
-Shapes breads according to a tight work schedule
-Communicates with management to maintain a good work schedule
-Ensures all products are made according to Firebrand standards
-Communicates well with fellow co-workers to maintain a positive work environment
-Ensures equipment is handled with care and cleaned
-Daily, weekly, and monthly cleaning tasks are completed
Late Morning Shaper- 8:30am-5pm
-Shapes breads such as wheat, sourdough, German rye
-Feeds starters
-Writes and maintains personal schedule for the day
-Communicates directly with manager on duty or owner by phone
-Communicates well with co-workers
-Adhere to the high standards of shaping set by Firebrand
-Maintains clean work environment throughout the day
-Mixes rye and sometimes poolishes
-Maintains organization of proof box
-Troubleshoots potential problems with shaping or storage of bread
-Puts away and cleans dishes at end of shift
-Breaks down and puts away shipments that arrive during shift
-Ensures equipment is handled with care and clean
-Daily, weekly, and monthly cleaning tasks are completed
